Wade:
Omelets are fairly easy, just a matter of Temperature and timing.
Whip up 2-3 eggs in a bowel or cup, pre dice your meat , cheese vegies , what ever.
Use medium heat and I would recommend cooking spray .
If on a conventional stove use a "stoneware" fry pan, preheat the pan, spray, add the beaten eggs and wait about 10 seconds before messing with them.
As soon as you can lift an edge with a spatula and see a bit of color on the under side, add the diced up goodies to half (one side) of the omelet .
With the spatula, flip the unloaded side over on top of the loaded side and gently press with the spatula , then start rolling the omelet back and forth (over) until it's done (color looks good and is firm).
Slide it out of the pan and eat !
It's a bit trickier to do in a cast iron skillet over an open fire but can be done .
Just like CW, takes a bit of practice but the end result's can be quite good.
