Default Quick Cod Recipe

2 ea 8-10 oz cod filets
12 or more Ritz crackers crumbled up, but not to fine
4 tbs butter melted
1 tbs fresh chopped parsley

Pre-Heat oven to 450...in a baking pan, cover bottom with parchment paper, place the cod on the paper....mix the cracker crumbs, butter and parsley together and top the cod with it. Don't be shy with it...bake in a 450 oven for 15 minutes....that's it...comes out great I like asparagus with this and baked potato or rice (which I cant have anymore)...very simple recipe... also a simple change to the recipe is to use a bruschetta over the fish instead of the cracker crumbs..comes out just as good...NOW I'M HUNGRY

Hey Mark- I tried your recipe last night and the XYL loved it. I guess we will be having that dish a lot in the future.

Thanks for sharing that with us I'd bet it would be good with any fish fillets like Bass or Red Snapper. Yeah and now I'm hungery

I love to cook as much as I love ham radio....so much food, so little time...HI HI..I have many other recipes that I have come up with over the years and I am not a professional cook at all...just enjoy doing it
